COLD ROOM - COLD STORAGE

When harvested fruits and vegetables are stored under favorable conditions, they retain their fresh form for a while. Favorable conditions are provided by adjusting the temperature and relative humidity. Each fruit and vegetable has a certain temperature and relative humidity at which it can be best stored. In fact, the optimum storage requirements of the same fruit or vegetable may vary depending on the variety and ecological conditions in which it is grown.


As a general principle, the temperature in storage is between 1° C -2 ° C just above the freezing point of the stored fruit or vegetable. So, the product does not freeze in cold storage.


The following variables are taken into account when projecting the cold room warehouse;


  • Features of the product and packaging to be placed in the warehouse,
  • How to fill the cold room air tank,
  • Lamellar ranges and structures of evaporators,
  • How to install the evaporator fans,
  • Difference between evaporator surface temperature and room temperature,
  • Insulation of cold storage,
  • Air circulation in the cold storage,
  • Frequency of doors opening.
